Let’s talk about raw oysters & clams. Delicate, delicious, and especially in warmer months, dangerous. As water temps rise, 🦪 carry ⬆️ risk of Vibrio, a nasty “flesh-eating” bacteria & other pathogens. The kicker? They’ll smell and taste normal. If you’re immune-compromised, avoid raw shellfish.

To reduce risk, water temperature should be below 60 degrees when shellfish are harvested and storage should be between 33-40 degrees. A handy rule of thumb is to only eat raw 🦪 in months containing the letter “R”, aligning to when water temps are coldest in areas where they’re commonly grown.

We're in a red tide here on the Olympic Peninsula, so all shellfish is off the table. Beaches up and down the strait are warning people not to eat the oysters, clams, and mussels. I've seen more people swimming in the Strait of Juan de Fuca than ever before. The water is usually too cold.

With the current administration and what they’ve done to the FDA, any raw foods and unwashed produce are probably a bad idea. When the government becomes functional again, a good rule of thumb is to only eat raw oysters in months that have an R in the name 😉

This is a very fair point.

Since moving here from New England I have been amazed at how different oysters clams lobster taste pulled from colder parts of the Atlantic v. mid-Atlantic. Can rarely eat fresh caught seafood here. Instead we order it delivered from New England. Shipped overnight the day it is caught/harvested.

This altCDCer also prefers northern Atlantic oysters, from water in the low 50s. Preferably with a glass of champagne. Gotta live a little.

Oh yes. I like my oysters with a bit of garlic, lemon, parsley, salt and pepper. Lovely. I am leaving Massachusetts for LA in 5 months. 😢 opportunity to extend my protected mentored training with a great mentor, at a stellar institution. Will continue working on the same projects. But LA?

Brookline here, but own a property and raised my children in ashfield! Love love love it there. Currently in the Boston area for work, but about to leave for LA. Alone. For at least 2 years. I think it is a sort of golden opportunity thing. Too good to refuse (I think).

Either my hubby will join me there in 2 yrs, or I’ll come back to mass. but I think the time in LA may open up additional possibilities. As the time where I am brought this one in LA. A bolt from the blue really. still mentored, but an extraordinary opportunity.

Sorry to go on, I’m pretty excited, and haven’t been able to discuss with many colleagues, as it’s not just my news. But more of an open secret now I guess. moving across country in 5 months time, and I’ve only known for about 3 weeks. And made the decision to accept within a few hours. Crazy.
