Given where you are, humidity is gonna affect your recipes. And probably elevation. For future, I'd use less banana than the recipe calls for to adjust, but for now, a bit extra baking, though don't let them burn.

They probably need to cook a bit more. Recipes for baking are hard because they don't allow for changes in elevation, humidity, etc that can REALLY affect baking times and ingredients needed. I'd put them in for two or three minutes.

I literally worked myself back onto disability because we don't support the disabled in our society. It makes me so mad to see awesome people like you and I struggle simply because we have health issues.

I am looking for alternative work, but between the migraines, heart failure, and being hard of hearing to start with, I'm basically no use to no-one at this point. So for now I'm just trying to sort August rent while I come up with something I can do.
