Ocarina of Time was seen as the closest thing that Nintendo had to FF7, and the Space World demo (which was viewable online on sites like early IGN) felt like it was Nintendo giving those fans what they wanted. So when Wind Waker was revealed as the actual Gamecube Zelda instead, backlash ensued.

It helps to look at the wider atmosphere of console wars back then. The idea of a more "mature" Nintendo (and by extension Zelda) was in demand by several vocal fans who thought the company was losing to Sony, who had FMV and Final Fantasy 7 and supposedly more adult franchises.
