Since invoking the 5th is always about a fear of prosecution for things not yet said - and the fear of DOJ prosecution appears quite reasonable - wouldn't prosecution for any current false statements not be covered by the prior pardon, and therefore be a legitimate basis for invoking the 5th?

Presidential immunity applies only to "official acts". It is unlikely even this SCOTUS would hold that it applies to defamation of a private citizen, particularly when the issue involved an incident that predated Trump's presidency. And the Congressional debate privilege applies only to Congress.
