That is so deeply confusing given the amount of good cheese that's made up north. There are myriad options with structural integrity that would give it the right texture!

Ooh yes. Have you seen the person who does "unhinged cheese pairings" with candies and chips and such? That could be a great start: www.instagram.com/cheezytalkwi... Stuff like nice chocolate or good pickles (or better yet, peppadews) could be a good addition if Skittles are a bridge too far, heh.

I have also been thinking a lot about pimiento cheese. I would love nothing more than to get a tub of the jalapeňo pimiento cheese from the deli section at H-E-B and devour the whole tub with a spoon. I guess I need to make my own up here, which is doable.

We all like to eat, drink and poop in cool places, though. That much is universal, and I don't think it's that hard to get folks on that side. I mean, gosh, look at the extremely diverse group of folks who are enraged at the idea of a wall through Big Bend. These are our places. Don't mess with 'em.

NO CHEESE IS TOO BASIC TO BE DELICIOUS! I just ate some shredded pepper jack out of the bag in front of the fridge, and it was delicious. No regrets.
