Regarding the value of mainstream media attention, Reid refers to a 2025 Food & Wine story about Alga. "Very cool, but doesn't do shit for you," he said, to laughs, describing how people would come in to say they'd seen the article and then not stick around and buy much/anything. Post here:

A sign of the times: Zach Smith of Ceremony in Bonita Springs describes how obtaining a full liquor license has dramatically changed his taproom business. One of his slides urges owners to aim for a 69% margin on cocktails and a 420% markup on bottles.

"If you wear a Wilford Brimley sweater-vest, you get 10% off or some shit," he said. "Is this bad?"

Astl is now talking about something Angry Chair does called "Brimley's Brunch" that is, yes, a Wilford Brimley-themed brunch. "It is gimmicky, but it has worked for us for years," he says. I had never heard of this, so I looked it up, and, well:

"As long as you put your whole ass into it, your customers are going to put their whole ass into it, too" recommends Tyler Astl of Angry Chair. "One of the things that we are known for is just pimping the shit out of a beer release."

I am now at a seminar called "Profitsmaxxing Your Taproom.” The panelists had Creed playing as everybody walked in and then just… left it playing. It’s a disorienting but very powerful energy.
