While I'm posting about uses for cheese sticks, if you crush up pork rinds, and whisk an egg, you can make low-carb cheese sticks. (This is not vegan or veggie, obviously.) You might be able to make a vegan substitute with seasonings, almond flour, and nutritional yeast, though.

I might be a genius. Take 1 corn tortilla. Dampen slightly. Microwave til it's flexible (10-20 seconds). Use what you have as a spread. I used street corn dip. (Salsa, guac, hot sauce, or refritos would work. Be creative!) Unwrap 1 cheese stick. Roll tortilla around it. Air fry 7 min @ 370.

Air fried potato + leftover brown gravy + veggie sausage crumbles + a fried egg? Surprisingly delicious. Just a hint of black pepper and pink salt with chili. I guess if I had swapped the sausage for cheese curds, it would be breakfast poutine.
