For personal stuff, I'm almost always on Gemini. I've never cared for OAI, and Anthropic insists on sending me an email OTP to log in because they're too cheap to build out SMS support bsky.app/profile/joei...

I used ChatGPT's guidance making a chili crunch oil last night. While I liked the result, I could have done without the BS pretence that it had actual culinary preferences — "I like to reconstitute the dried mushroom pieces before sautéing them…"

Exactly how my grandmother's index cards are 😂 Though they mostly got inherited by my aunts. The only one I got was for peanut blossoms (my favorite cookie) which I promptly typed up and added to my old law school blog bsky.app/profile/qotm...

General Disarray

Family canon recipes must be documented and handed down on grease stained index cards far older than you are, written in faded and barely decipherable cursive, ideally in pencil. Sorry I don’t make the rules

This is why I'm glad that I actually don't have a long cooking (esp. baking) tradition I'm inheriting from and my culinary guideposts (first and foremost @altonbrown.bsky.social) use grams.

My success rate with YOLOing recipes has been very bad 😑 Rarely inedible, but also rarely good bsky.app/profile/grit...

My cooking chops are...not good, but sometimes I read super old historical recipes for fun and try to imagine making them and just come up with ??? It's like 'make a broth, put unspecified amounts of certain ingredients in--or don't to taste, roast thing, the end'

Have given very serious thought to enrolling in a culinary program for fun. But the local options seem focused on people wanting to do this professionally, and I want to just not suck at it 🤪

Those culinary programs are hard work.

Good Eats with @altonbrown.bsky.social should be streaming somewhere

I've been experimenting/learning more this past year. I highly recommend the cooking videos from Jacques Pepin and Alton Brown. Both have tons of stuff on YT and have a good mix of recipes per se and various tips/techniques that are generalizable. Both are also just entertaining in their own ways.

True story: the reason all those stories get added in is because recipes cannot be copyrighted Someone somewhere told somebody once that adding in a story protects the whole work, and everyone ran with it (even though it's not true) bsky.app/profile/vagu...

You don't have to scroll through a long fictional story about a trip to Greece with a now dead mom before getting to the recipe?

I always thought it was just to boost time on page and increase ad placement opportunities

It's a bit of both.

I just heard a podcast mention that cooking websites require contributors to put a story at the top for SEO purposes. Odd phenomenon

It is also to help boost time read on the site, which boosts ad revenue, and bumps up the word count, which was a key metric for google 5-10 years ago. Having less than 250 words on the page was a big no no for SEO.

Dwell time required on page to trigger a “view” also part of the annoying equation

i have a couple friends that did the cia program. neither planned on doing it professionally. spendy and lots of time but they really enjoyed it.

A good place to start is Ruhlman's book Ratio. Cooking "without recipes" is mostly about replacing recipes with ratios.

There's also @diane.dianeduane.com 's Food and Cooking of the Middle Kingdoms, where she creates recipes she refers to (or implies the existence of) in her (very pre-industrial universe) novel series. foodandcooking.middlekingdoms.com

(My personal frustration on the subject is when recipes call for ingredient sizes that no longer exist. 6 oz of tuna?)

These are very fun! I like them...but also kinda 'aaaaaah, more things I am not confident in actually trying.' I mean, I might be able to do some of those.

Oh, likewise. I like to think that I'm an ok cook, but at some point (I think my apartment kitchens shrunk too much) I pretty much gave up on complicated cooking (if it doesn't fit on an inherited index card, probably not doing it)

Ответ для T. Greg Doucette

Both require that someone put the recipe on the internet, no?

I'm not knocking AI, just trying to better understand it, as I don't use it (not needed in my profession).

My mother passed away in 2020 from Alzheimers. Years before we knew she had it she hand wrote her marinade recipe for dehydrator beef jerky on a piece of notebook paper for me. That paper is folded in the recipe box complete with soy and Worcestershire sauce stains (from me) but it is precious.

"dehydrator beef jerky" God loves Ron Popeil (1935 - 2021) Rest in Peace. 😉 ps and he loves your mama.

Also most likely they don't have actual measurements but mostly directions like "add butter" or "throw in a handful of..."
