Martha SmithSpeaking of, a ripe lime should be at least 30% yellow. Don't be juicing those grass green guys. They aren't juicy, they're bitter, and the perfume hasn't developed. Let them hang out on the counter for a few days, then refrigerate in a container so they don't dehydrate and get hard.
