Who will think of the label readers once again?! (I'm saying this dramatically for a funny effect but I'm also kind of actually mad about it.) I'm tired of being required to make everything from scratch because companies keep bastardizing their products. I'm too sick to make my own replacements!

So many food products are geared towards your baby-est consumer who never reads labels and demands everything always taste perfect I miss the very early days of Vega nutrition drinks (like ~2010 ish) because it was super good for nutrition (esp for athletes), and unapologetically tasted like trash

I'm in the middle of reading a book on gluten-free baking, and one of this book's big things is: you don't need gums in gluten-free baking! Like 90-95% of things you can make just as well if not even better without added gums.

Gums are often high histamine, making most GF items at the grocery store unavailable to me. To be fair though, I avoided most gummy GF products even before becoming big sick. It's just not necessary. Why would I put something unnecessary like that into my body?

Why not just deal with slightly less than optimal texture? (Which again, doesn't even have to be the case, but too many food companies care more about swindling you out of your dollars with perfected products for the lowest production cost, than providing you something that's actually nutritious.)

So before it was a choice but now it's an actual accessibility issue When you shove a bunch of unnecessary ingredients into a food item, fewer people can buy it! And usually it's the very people who most need help figuring out low-effort eating (= sick folks with restrictions) who now can't eat it.

I just wish more people gave a damn about what they were putting into their bodies bc: 1. It would benefit their own bodies and health! 2. It would make it possible at all for sick people to be able to buy more pre-made stuff at the store!

What irritates me the most is that the foods being sold as "health foods" are often some of the worst culprits.

Yeah, it's gotten worse in recent yrs, most health products aren't really geared towards nutrition nerds anymore, it's more for ppl who want the air of being healthy without actually paying attention to it Feels like the same cultural trend as AI: be an artist without actually being an artist! etc

PS: To be clear, I'm not a total buzzkill on unnecessary ingredients. Will I eat something like artificial food coloring on a birthday cake now and then? You bet I will. Because that's an every once in a while thing and not something I'm relying on for daily nutritional intake.

(But if I'm making the cake myself, you can sure as heck bet I'm reaching for the natural food coloring at the store. Even if I'm making the cake for someone else. Food choices, like everything, are political.)

I'd have to double check, but I'm pretty sure the ingredients lists on most items from my local gluten-free bakery do not contain gums (they list their in house flour ingredients as well) and the texture is a million times better than most store stuff.

NO clue if it’s helpful—King Arthur has a lot of GF products, and podcast episodes (What Bakers Know) about GF bread etc.

I didn’t know gums in GF foods are high histamine! Xanthan Gum and guar gum come to mind but what are other gums I should look out for? Is tapioca one?

They vary! The SIGHI list is a good reference for individual gums (plus a ton of other food additives) There are actually one or two gums that are lower in histamine; supposedly xanthan gum is lower?, but I don't trust that one since it's often made from mold

Tapioca flour or starch isn't a gum and so is very low histamine! I rely on it a lot as an ingredient

A lot of people with complex illness stuff, yeah; not necessarily everyone, but a lot of us!

(This is also one of the big reasons a lot of folks with MCAS struggle with citric acid as an added ingredient -- as an additive, it's usually made from mold, also. Used to be made industrially from citrus fruits, but it's cheaper to make from mold, so... capitalism is why we can't have nice things)
